A typical mixed cut quarter will yield approx. 100lbs of packaged cuts. Customers are only billed for the packaged meat they receive and are not adversely impacted by process variability.
The meat cuts that you purchase will be made up of roughly:
14 lbs loin steaks
16 lbs chuck steaks and roasts
16 lbs round steaks and roasts
17 lbs other cuts (brisket, flank, short ribs, skirt steak, stew meat)
37 lbs of ground beef (approx. 93% lean)
We can accommodate most special portioning requests. If you would like smaller roasts or more steaks per package, we can make that happen.
Orders can be picked up at the farm in Palisade, MN. Home delivery is also available for a nominal fee.
